Ok this is a question and an Idea. Has anyone created a mob that can search or pick out the best mining spot/ore node and able to mine it independently? Almost like a Horde minion where is will go loot a corpse but go mine a ore node but be able to pick out a certain ore in a certain radius of its owner or controller? Does that sound like it would be cool? I think so I would love to create this but sadly my capabilities are not up to task for it lol. This could apply to Lumber maybe even fishing.

Yes, on UO Kingdoms by @Diesel i created mining and lumberjack golems

Is there a script out there for it? would like to mod it maybe make a dwarf hirable mining escort or something lol

Sounds like the default ironbeetle?
And since the veins are set to being random (unless changed) you cant really seek those veins out since they get updated once you start to dig them / prospect them
